How River Canyon Ensures Food Safety During the Christmas Festive Season

At River Canyon, we understand the joy that the festive season brings, with families and friends coming together to share in the warmth of a bountiful Christmas feast. Whether it’s succulent roast turkey, honey-glazed hams, or indulgent desserts like Christmas pudding, food plays a central role in our holiday celebrations. To make sure that this festive time is not only delicious but also safe for everyone, we place a strong emphasis on maintaining the highest standards of food safety throughout the holiday season.

Here’s how River Canyon ensures food safety during Christmas:

1. Proper Food Storage:
At River Canyon, raw and cooked foods are always stored separately to prevent cross-contamination. We take care to store raw meats on the bottom shelf of our refrigerators, ensuring that any potential drips do not contaminate other foods. All leftovers are stored in airtight containers to preserve their freshness and quality. Our refrigerators are consistently monitored and maintained at or below 4°C (40°F) to ensure the safety of perishable items.

2. Safe Cooking Temperatures:
Cooking food to the right temperature is crucial to eliminating harmful bacteria. At River Canyon, we always use food thermometers to ensure that our meats are cooked to safe internal temperatures. For example, our roast poultry is cooked to a safe 75°C (165°F), while beef and lamb are prepared to a temperature of 63°C (145°F). Leftovers are reheated to at least 74°C (165°F) before being served to ensure your meal is as safe as it is delicious.

3. Buffet Safety:
For our Christmas buffets, we ensure hot dishes remain at safe temperatures by using chafing dishes and slow cookers. Cold foods are kept chilled with ice packs or serving platters designed to maintain cold temperatures. Additionally, we closely monitor how long food has been out, ensuring that no perishable items are left out for more than two hours.

4. Thorough Handwashing Practices:
Hand hygiene is critical in preventing foodborne illnesses, and at River Canyon, our staff strictly adhere to proper handwashing protocols. Hands are thoroughly washed with soap and water for at least 20 seconds before and after handling food, especially when working with raw meat, poultry, and seafood.
